Chef Shan’s cooking is heavily rooted in tradition which he learned from his grandmother and mother who comes from Pondicherry, India. Now, Chef Shan applies his traditional knowledge with refinement and serves modern Indian cuisine at the newly minted 2 Michelin-starred Thevar.

Crab Masala
One of Chef Shan’s specialty dishes. Pondicherry crab masala really stands out with its very own sweetness coming from the crabs and is packed with lots of umami flavor from the special blend of perfectly roasted aromatic spices.
A favorite recipe which Chef has learned from his granny and ha been perfected over the years, this delicious masala has a good balance of sweetness, tanginess and strong depth of flavor that comes from ripe tomatoes and ground coconut.
Crab Rasam Soup
Rasam has always been a great comfort dish/broth full of spices with robust flavor.
This foolproof rasam will also give you a burst of incredible richness of tamarind and tomatoes. The base of the broth will be made using lots of crab shells that is gently simmered along with other spices and condiments. This is a perfect appetizer for any occasions especially during a rainy season.
Gobi Manchurian
Indian cuisine is rich with incredible vegetarian dishes. This delicious cauliflower recipe is a mix of Indo Chinese dish and is one of the popular ones.
It has a mixture of crispy cauliflower florets that are deep fried to perfect crispness then tossed with a mixture of savory sweet and sour sauce. This recipe will be a great alternative to jazz up your usual way of cooking cauliflower, it will never be the same after this.
