Chef Mohamed Al-Matin developed a passion for pastry at young age and developed a keen palate with a strong desire to push the boundaries of what pastry represents. Chef Matin honed his skills by working in well-established places by world-renowned chefs:

 

  • Adriano Zumbo (Adriano Zumbo Patisserie)
  • Christopher Thé (Black Star Pastry)
  • Peter Gilmore (QUAY)
  • Andre Chiang (Restaurant Andre, 2 Michelin Stars)
  • René Redzepi (Noma, 3 Michelin Stars)

 

With his valuable experience as Pastry Sous Chef of Noma, Matin returned home to share his passion for fine dining and patisserie through Le Matin Patisserie.

 

As the Chef-Owner of Le Matin Patisserie, he had a strong stance in the pastry scene in Singapore, and made his brand known for pushing the boundaries and flavors for pastries and cakes. His Patisserie was awarded the highest accolade of 3 spoons in the Sweet Spot guide amongst 50 other establishments.

 

In 2022, Matin was invited to be a guest judge on Masterchef, introducing a challenge for his signature Chocolate Tall Cake, and in 2023, Matin was awarded as a Tatler Gen. T Honouree.

 

In this class, you will be learning Le Matin’s best selling and signature items:

 

1.Le Matin’s Best Selling Fromage de vos Reves

It is also known as ‘Cheese of Your Dreams,’ is a cheesecake that features Brilliat Savarin mousse with an oozy Reblochon crémeux center, and a Comté sponge base. It’s all elegantly encased in a rind made from a milk crumble glaze, evoking the appearance of a classic cheese wheel.

 

2.Escargot Escargot

Traditional croissant pastry shaped like a snail and stuffed with juicy escargots from France, and a mushroom ricotta custard. It’s then coated with a garlic crumb and doused with garlic butter, then finished with a swirl of parsley chimichurri. If you don’t fancy escargot, you could replace it with other selected proteins as well but wait till you try this Le Matin’s signature escargot, you will not go back!

 

3.Crab Waffles, Taramasalata

Crispy Scandinavian style seafood butter waffles accompanied with a dip of homemade taramasalata (smoked trout roe), kombu seasoned crab meat and freshly chopped chives.

 

4.Mangosteen & Lychee Granita

A refreshing mangosteen sorbet with mangosteen and lychee segments, white fungus simmered in ginger syrup, topped with an icy lychee granita and lemongrass scented bubbles
