Chef Charles has started his culinary journey at the tender age of 16. He has travelled around the globe studying their food and culture. His past work experiences were with well-known restaurants in Singapore. Chef Charles is currently a free lance Chef whose projects include Michelin pop-up events.
The constant routine of work made Chef question his own identity in the culinary world, which sparked a change in direction. He started “The Lost of Hakka” project. In collaboration with the oldest Hakka restaurant and Hakka association in Singapore, he is embarking on a lengthy research to discover authentic Hakka cuisine.
In a world, where fast food and convenience often take center stage, we are sometimes forgetting the rich tapestry of flavors and stories that make our heritage. In this class, Chef will share with you 4 classic Hakka dishes which recipes have gone through numerous R&D and refinement while keeping its authenticity.
You will be learning the following:
1.Thunder Tea Rice/Hakka Lei Cha客家河婆擂茶
A quintessential Hakka dish. This traditional hakka pounded tea rice is served with an assortment of seasonal vegetables with delicious broth, nuts, seeds and herbs.
2.Hakka Nan Ru Fried Pork客家南乳炸肉
Pork marinated in fermented red beancurd and 5 spices. This crispy Hakka fried pork is a delicious comfort food that will be enjoyed by many.
3.Stuffed Dried Oysters with Black Moss/Fa Cai蚝豉发菜
A long forgotten Hakka dish. Dried oysters wrapped with minced pork and pig’s caul fat covered with sauce made with black moss
4.Black & White Rice Balls with Peanut and Sesame (Muachee) 糍粑
Learn to create this delicious dessert! Homemade black and white glutinous rice balls coated with sesame and peanut.
