Beetroot Cured Salmon with Refreshing Fruit Salsa

Welcome to the wonderful world of curing, a type of fermentation to preserve the fish that will also wonderfully boost its flavor and texture. Do not be intimidated from curing your very own salmon, it is very possible to do at home and much easier than you think with the good quality ingredients and techniques. You will know exactly what ingredients that are put inside your salmon and will make it a much healthier option than the store-bought one.

 

Chef Kelvin cures the salmon with an earthy beetroot and amalgamation of salt, sugar, spices that gives the salmon its beautiful bright color and delicious flavor. It is very healthy and once it is done, it will make an impressive addition to any breakfast, lunch or dinner table. The cured salmon keeps very well inside the fridge and freezes well as well. You can eat the cured salmon on its own or in this class, Chef Kelvin will teach you to serve it with a delicious fruit salsa.

 

French Coq au Vin

Coq au vin is a classic French dish in which chicken is slowly braised in stock, red wine/brandy to yield a supremely rich sauce filled with tender meat, crisp bits of bacon, mushrooms and burnished pearl onions.
